Re. Fridays Curry Night... I don't do Caribbean (mainly because I've never tried)
but, to be different, can offer either a North African or South African Chicken
Dish...as follows:
1) 1 Pot Hot Chicken and Mediterranean
Rice
Chunks of Chicken and Smoked Streaky Bacon pan fried
in oil and Paprika along with Onions, Ginger, Chilli, and Garlic then simmered
with
Arborio Rice and Chicken Stock. Black Olives and a good dusting of dried
Thyme are added and topped with chopped Parsley.
2) 1 Pot District 6
Lime and Coriander Chicken Piri Piri
Chunks of marinaded
Chicken and Smoked Ham pan fried in oil and Garlic Butter along with Onions,
Peppers and Chilli's then simmered in Chicken Stock and a Lime and Coriander
Piri Piri Sauce. Served with a steamed medley of Rice and Mixed Veg. and topped
with Chopped Coriander.
